Mad hens, huevos rancheros, and a horseman's breakfast

Getting some breakfast around here takes a little doing.

First, you have to steal the eggs out from beneath Lucille, the Rhode Island Red, who hops and clucks and will give you a good peck if she can.

Then, you have to keep a sharp eye out for that fox in the henhouse. Matilda-the-tenacious-heeler is an unwelcome visitor. And the irascible geese are soon on the rampage.

After escaping the wrath of the geese and rescuing Matilda-the-apparently-not-so-tenacious-heeler from certain death (sorry, no photos of that as I was too busy wrangling five pissed-off geese), you return to the ranch house where your husband makes you his fabulously fattening huevos rancheros, the quintessential horseman’s breakfast.

Huevos rancheros is a classic New Mexican breakfast dish. Translated from the Spanish as "eggs ranch-style" or "country-style," the dish traditionally would have been served at the large mid-morning breakfast, or almuerzo, on rural farms where workers had a much smaller meal at dawn so they'd still be light enough on their feet to flee outraged hens and geese and save their sorry dogs.

The basic version of huevos rancheros consists of corn tortillas fried lightly, and fried eggs with a tomato–chili sauce. Refried beans (frijoles refritos), slices of avocado, fried potatoes, and extra chili peppers are common accompaniments. Scrambled eggs can be used instead of fried eggs. (But don’t tell the hens that.)

Of course, Dennis has his own special secret recipe which of course includes bacon, the food of the Gods. I am very glad we don't own a pig!
